Directions: Chop the preserved ginger into little pieces of varying sizes.
Pour the honey into a medium saucepan and cook very, very gently over a low heat until a small amount, dropped into cold water, forms a hard ball.
Remove from the heat and stir in the nuts and the ginger. Spoon small dollops of the mixture onto waxed paper and allow to cool.
