
Danish Butter Cookies

1 1/4 cup unsalted butter, softened
1 1/2 cup granulated sugar
3 egg yolks
2 1/4 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 1/2 teaspoon almond extract
Combine the butter and sugar in a mixing bowl. Beat on medium speed with an electric mixer until creamy. With the mixer running, add the egg yolks one at a time, beating well after each addition.
Combine the flour, baking soda, and cream of tartar in another bowl. With the mixer running, add the flour mixture in small increments to the butter mixture. Add the almond extract and mix well.
Cover the bowl and chill the dough for 1-2 hours or until well chilled.
Preheat the oven to 325 degrees F.
Roll the dough out into small balls and place on an ungreased baking sheet. Flatten the cookies using the bottom of a glass that has been dipped in sugar.
Place the baking sheet in the oven and bake at 325 degrees F for 12-15 minutes.
Remove the cookies from the baking sheet immediately and let them cool on a wire rack. Store the cookies in an airtight container.
