Ingredients: 3 firm, ripe oranges or lemons 1/4 cup granulated sugar, plus more for sprinkling if desired 1/2 cup water
Directions: Carefully peel the fruit using a vegetable peeler. Be careful to avoid including the white pith.
Cut the peel into strips.
Place the fruit peels in a saucepan with enough cold water to cover. Bring to a boil. Drain the water and then rinse the fruit peels under cold water.
Return the peels to the saucepan. Add the sugar and water. Bring to a simmer over medium heat and let cook until the liquid has evaporated and the fruit peels are brightly colored.
Spread the candied peels in a single layer on a sheet of aluminum foil or waxed paper. Let cool. If desired you can toss them with sugar.
Store the fruit peels in an airtight jar in the refrigerator for up to 6 months.
