Ingredients: 2 ounces butter 3 ounces brown sugar 1 Red Delicious apple, diced small 1/2 cup dried cherries 1/4 red bell pepper, diced small 1/4 green bell pepper, diced small 2 cloves garlic, sliced 1 shallot, minced 4 fresh sage leaves 3 ounces cider vinegar 1 cinnamon stick 1 bay leaf salt and pepper, to taste
Directions: Place butter and sugar in a saute pan over medium-high heat and carefully caramelize the sugar. Add shallots, bell peppers and dried cherries. Toss together. Add vinegar, apples and garlic and let simmer.
Add bay leaf, chopped sage leaves and cinnamon stick. Continue simmering until it reaches the desired thickness. Adjust flavor with salt and pepper and serve with grilled pork chops.
