Ingredients: 7 dried apricots, sliced 2 ounces goat cheese, crumbled 1/4 cup shelled pistachios, pecans or walnuts 2 cups romaine, Bibb, or red leaf lettuce, chopped 1 tablespoon balsamic vinegar 1 tablespoon olive oil
Directions: Mix ingredients and season with salt and pepper to taste. Toss and serve.
