Ingredients: 12 ounces fresh cranberries 1 lime, quartered and seeded 1 piece (1 inch long) fresh ginger, peeled and sliced 1 cup white wine or water 1 cup granulated sugar 1 cinnamon stick 6 dried whole allspice 2 cups 80-proof gin
Directions: Add the cranberries, lime, and ginger to the bowl of a food processor. Pulse-process until the ingredients are well chopped.
Heat the wine or water, sugar, cinnamon stick, and allspice to boiling in a saucepan over medium-high heat. Stir constantly until the sugar is dissolved. Add the chopped cranberry mixture and let simmer for one minute. Remove the pan from the heat and let the cranberry mixture cool slightly.
When the cranberry mixture has cooled, pour it into a container with a tight-fitting lid (glass preferred). Add the gin to the container. Seal well and set in a cool, dark place for 1-2 weeks.
Strain the liqueur through a fine sieve or double layer of cheesecloth into a clean, sealable container. Discard the solids.
