
Chocolate Spinach Brownies

1 package (10 ounce size) frozen, chopped spinach (thawed and squeezed dry)
1/4 cup oil
1 egg
3 tablespoons water
1 box (12.0 ounce size) brownie mix
1/2 cup milk chocolate chips
Preheat oven to 350 degrees F. Grease the bottom only of a 9x9 baking pan.
Make sure the spinach is well drained then add it to a food processor along with the oil, egg, and water. Process until smooth, about 1 minute, scraping down the sides of the workbowl as needed.
Transfer the spinach mixture to a large bowl. Stir the brownie mix into the spinach until incorporated.
Transfer the brownie batter to the greased baking dish. Place in the oven and bake at 350 degrees F for 30 minutes or until just set.
Remove the pan from the oven and let cool on a rack for 15-20 minutes. Meanwhile, melt the chocolate chips in the microwave on HIGH for one minute, stirring every 10 seconds, or until melted. Spread the melted chocolate on top of the brownies. Let stand until set then cut into squares.
Store the chocolate spinach brownies in an airtight container for up to 5 days.
