Ingredients: 1 pound lean ground beef 1 medium onion, chopped 3/4 cup ketchup 2/3 cup frozen corn or canned corn, drained 1/2 cup canned black beans, drained and rinsed 1/2 cup tomato sauce 1 teaspoon minced chipotle pepper with some of the adobo sauce (or more if you like the heat) 1/2 teaspoon ground cumin 1/4 teaspoon salt 1/2 cup fresh cilantro leaves, chopped 6 sandwich buns
Directions: In a skillet, brown the meat and onion. Cook until meat is not longer pink. If it has any grease in pan, drain the grease from the meat
Stir in the ketchup, corn, beans, tomato sauce, chipotle pepper, cumin and salt. Cook 5 minutes, stirring frequently. Remove from heat and stir in cilantro. Serve on buns.
Cook's Notes: You can freeze the rest of the chipotle sauce for later use. If you want to make in a crockpot, put all ingredients, except cilantro, in crockpot on low after you brown the meat.) Make sure meat is cooked before adding to crockpot.
