Ingredients: 1/4 medium green cabbage, shredded 1 carrot, shredded 1/4 small red onion, thinly sliced 1 lime, juice and zest of Kosher salt freshly ground black pepper 3/4 cup sour cream 1 chipotle chile in adobo, finely minced 12 ounces cooked chicken, shredded or coarsely chopped (rotisserie chicken is ideal), slightly warm or room temperature 8 warm taco-sized corn or flour tortillas 20 sprigs cilantro
Directions: In a large bowl, combine the cabbage, carrot and onion. Add the lime zest and lime juice and toss well. Add salt and pepper to taste.
In a small bowl, whisk together the sour cream and the minced chipotle. Add salt and pepper to taste.
To assemble the tacos, arrange 2 tortillas on each serving plate. Divide the chicken among the tortillas, arranging it down the middle. Top the chicken with some of the cabbage mixture, a dollop of the sour cream mixture and 2 or 3 sprigs of cilantro.
