Ingredients: 2 tablespoons olive oil 1 small onion, minced 1/2 pound ground chuck or turkey 1 zucchini, grated 2 cups whole cherry tomatoes salt and freshly ground black pepper to taste 1/2 cup heavy cream 1 tablespoon dried oregano 1/2 cup minced fresh basil 1/2 pound whole wheat penne, cooked al dente 2/3 cup grated pecorino cheese, or more to taste
Directions: Heat the olive oil in a 10-inch-wide, 2-inch-deep, flameproof and ovenproof casserole dish with a lid. Cook the onion over medium heat until it wilts; stir in the ground chuck and brown well.
Stir in the zucchini and cook, stirring well, for 2 to 3 minutes. Add the cherry tomatoes and salt and pepper. Cook covered for 5 minutes over medium heat.
Uncover the dish, lower the heat and stir in the cream. Add the oregano and basil. Stir in the penne and combine well. Sprinkle the top with the cheese.
Cover the dish and bake for 35 to 40 minutes in a 350 degrees F oven. Serve hot.
