Ingredients: 1 1/2 pound floury potatoes 6 tablespoons extra virgin olive oil salt pepper 3 tablespoons capers, soaked in water (optional) 4 tablespoons chopped flat leaf parsley or coriander ***Optional*** 12 chopped black or green olives 2 ounces coarsely chopped anchovy fillets
Directions: Peel the potatoes and boil in salted water until soft. Drain, reserving a little of the cooking water.
Mash the potatoes and beat in the olive oil. Add salt and pepper to taste and enough of the cooking liquid to give a soft and slightly moist texture.
Drain the capers well, then stir in with the parsley. As a variation you can fold in the olives or chopped anchovy fillets.
