
Black-Eyed Pea Restaurant's Spicy Soup

5 slices bacon, cut in small pieces
1 cup onion, chopped medium
2 tablespoons (or to taste) jalapenos, finely chopped
2 cups tomatoes, chopped medium
1 clove fresh garlic, minced
1 pinch salt
1 dash black pepper
3 cups water
2 beef bouillon cubes
4 cans (16 ounce size) black-eyed peas
3 cups grated Cheddar or Swiss cheese
In a saucepan, saute the bacon until lightly browned. Saute onions, jalapenos, tomatoes, garlic, salt and pepper in the bacon and bacon drippings.
Add the water. Dissolve the beef bouillon cubes in the mixture. Drain juice from the peas and add the peas to the soup. Add the cheese of your choice and simmer until the cheese is melted.
