Ingredients: 2 cups flour 1/3 cup sugar 1 tablespoon baking powder 1/2 teaspoon salt 1/3 teaspoon nutmeg 2 eggs 3/4 cup milk 1/4 cup butter, melted 1 cored, peeled and grated baking apples, (e.g., Granny Smith) 3/4 cup finely shredded cheddar cheese
Directions: Heat oven to 400 degrees F. Spray regular-size muffin cups with vegetable spray.
In large bowl, sift together flour, sugar, baking powder, salt and nutmeg. In small bowl, whisk eggs with milk and butter until blended.
Using wooden spoon, make a hole in center of flour mixture; pour in egg mixture all at once. Stir just until the flour disappears and AVOID OVERMIXING! Fold in the apples and cheese.
Spoon batter into muffin cups until 3/4 full (I sprinkle a tiny bit of sugar over batter at this point.) Bake 20-25 minutes or until golden brown.
Cool in pan on wire rack for 5 minutes. Lift out with spatula onto wire rack to finish cooling. Serve hot with honey.
