Ingredients: 3 cups flour 1/2 cup brown sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 3 tablespoons butter, chilled 1/4 cup buttermilk 1 teaspoon vanilla extract 2 egg whites 1 cup banana, mashed 1/2 cup chocolate chips vegetable cooking spray 1/3 cup walnuts, coarsely chopped 1 tablespoon brown sugar
Directions: Heat oven to 400 degrees F.
In a large mixing bowl, combine flour, sugar, baking powder, salt, and baking soda. Cut in butter with a pastry blender until the mixture resembles coarse meal. Set aside.
In a medium bowl, mix buttermilk, vanilla, egg whites and banana. Add wet mixture to dry mixture just until combined. Mix in chocolate chips.
Turn dough out on a lightly floured surface. Knead lightly. Spray a large cookie sheet with vegetable cooking spray. Pat the dough into a 9-inch circle on the cookie sheet.
Sprinkle the walnuts and brown sugar over the dough, pressing gently into the dough. Cut the dough into equal slices. Bake for 20 minutes.
