Ingredients: 4 teaspoons dry yeast 1 teaspoon sugar, PLUS 1/2 cup sugar, divided 1 1/4 cup warm water (110 degrees F) 5 cups flour 1 1/2 teaspoon salt 1 tablespoon vegetable oil 1/2 cup baking soda 4 cups hot water salt melted butter
Directions: Dissolve yeast and 3 tsp sugar in warm water. Let stand 10 minutes.
In large mixing bowl, mix flour, 1/2 cup sugar, and salt. Make a well in the center. Add yeast mixture and oil to dry ingredients. Mix well. If dry, add several tablespoons water.
Knead dough 7-8 minutes until elastic. Place in oiled bowl and cover. Let rise in a warm draft free place, until double, about 1 hour.
Preheat oven to 450 degrees F.
Dissolve baking soda in hot water in large bowl. Divide dough into 12 pieces. Roll each into a long thin rope--about 20" long--on an unfloured surface. Shape each into a pretzel. Dip in soda water solution and place on greased baking sheet. Sprinkle with salt.
Bake 8 minutes until browned. Brush with butter.
