Ingredients: 12 hard-boiled eggs, shelled 1/4 cup mayonnaise 1 jalapeno pepper, seeded and minced 1 tablespoon ground cumin 1 tablespoon prepared mustard 1 teaspoon cayenne pepper 1/4 teaspoon salt paprika or Cajun seasoning for extra heat
Directions: Slice the hard-boiled eggs in half, lengthwise, using a sharp knife. Carefully remove the yolks from the whites. Place the egg whites in a platter or deviled egg tray. Place the yolks in a bowl.
Add the mayonnaise, jalapeno, cumin, mustard, cayenne pepper, and salt to the egg yolks. Mash well with a fork until all the ingredients are combined. Add additional mayonnaise if the filling seems dry.
Spoon the egg yolk mixture into the egg whites (alternately, you can use a pastry bag and pipe the filling into them). Sprinkle the eggs with the paprika.
Serve the Cajun deviled eggs immediately or chill in the refrigerator until ready to serve.
