Ingredients: 1 package baby spinach, chopped and washed well 1 medium Yukon Gold potato, grated 2 tablespoons light tasting olive oil 2 scallions, chopped fine 3 eggs 1/4 teaspoon fresh nutmeg, grated 1 tablespoon fresh cilantro, chopped 5 tablespoons flour
Directions: Preheat oven to 375 degrees F.
Place washed spinach in a dry skillet. Cook until just wilted. Add grated potato, nutmeg, scallion and cilantro. Combine well.
Stir in eggs, coating mixture well. Add flour a tablespoon at a time until thick batter forms.
Brush a small baking sheet (metal) with olive oil. Take a heaping tablespoon of mixture and make small patties. Place on baking sheet and bake until golden.
Good for babies 12 months old and up
