Directions: Cook bacon according to package directions.
Place half the bread slices on a work surface. Top with half the soy cheese, the bacon and the tomato. Top with remaining soy cheese and bread slices.
Coat griddle or skillet with nonstick cooking spray. Over medium-high heat, cook sandwiches 2 minutes on each side, until cheese is melted.
