Ingredients: 3 pounds boneless chuck roast 1 tablespoon vegetable oil 1 large onion, chopped 1 can (4.25-oz. size) green chiles, chopped 1 envelope taco seasoning mix 1/4 cup water 1 tablespoon apple cider vinegar ***Tortillas and Toppings*** soft tortillas sour cream salsa shredded cheese shredded lettuce guacamole diced tomatoes
Directions: Brown the roast in the oil in a skillet over medium-high heat for 2-3 minutes per side. Place roast in slow cooker and add onion and green chiles around it.
Sprinkle taco seasoning over all and pour water and vinegar into bottom of slow cooker. Cover and cook on LOW for 8-10 hours, until beef is fork tender (and falling apart!). Shred meat with fork and serve with tortillas and toppings.
