
Cajun Smoked Turkey

1 turkey, completely thawed if frozen
3 tablespoons dried oregano
3 tablespoons dried onion flakes
3 tablespoons fresh cracked black pepper
3 tablespoons ground white pepper
3 tablespoons garlic powder
2 tablespoons sweet dried basil
1 1/2 tablespoon paprika
1 tablespoon cayenne pepper
2 teaspoons ground bay leaves
2 teaspoons gumbo file powder
6 tablespoons olive oil
Preheat the grill to indirect heat of 325 degrees F (only one side of the grill should be heated).
Mix the spices and seasonings in a bowl until well mixed. Can be made ahead (store in an airtight container in the refrigerator).
Mix 5 tablespoons of the spice mix with the oil in a bowl.
Work the oil mixture into and under the skin of the turkey, pushing it in under the skin as far as possible.
Place the turkey on the unheated side of the grill, cover, and cook until done, turning the bird every 20 minutes for even cooking (cooking time will vary by the size of the turkey).
During the first 30 minutes of cooking time, cover the turkey breast with a sheet of foil. This will help it keep from drying out.
Cook until the turkey registers 170 degrees F in the thigh using a meat thermometer.
Remove the turkey from the grill and let stand 10 minutes before carving.
Cooking Times: 6-7 lbs. 2-2 1/2 hrs.; 7-10 lbs. 2 1/2-3 hrs.; 10-18 lbs. 3-3 1/2 hrs.; 18-22 lbs. 3 1/2-4 hrs.; 22-24 lbs. 4-4 1/2 hrs.; 24-30 lbs. 4 1/2-5 hrs.
