
Baked Fillet of Sole

3/4 pound sole fillets (lemon or gray sole)
1 pinch minced fresh rosemary
3 tablespoons white wine
1 tablespoon fresh lemon juice
2 scallions, sliced
1/4 pound mushrooms, stems removed, sliced
1 tablespoon chopped fresh parsley
salt and freshly ground black pepper
Preheat the oven to 350 degrees F. Grease a baking dish large enough to hold the fish in a single layer.
Place the fish in the baking dish. In a small bowl or measuring cup, combine the rosemary, wine, and lemon juice. Evenly drizzle over the fish.
In a skillet over medium heat, saute the scallions and mushrooms in a little bit of oil until the mushrooms are just softening. Evenly spoon the mushroom mixture over the fish.
Cover the baking dish tightly with foil. Place in the oven and bake at 350 degrees for 15 minutes or until the fish flakes easily with a fork.
Season the fish with salt and pepper and garnish with the chopped parsley. Serve hot.
