Ingredients: 3 eggs 1 1/2 cup sugar 2 cups ripe thinly sliced figs 3/4 cup canola oil 3 cups flour 2 teaspoons baking soda 1 teaspoon salt 1/2 teaspoon cinnamon 1/2 cup buttermilk 1 tablespoon lemon juice 1 cup chopped pecans or walnuts ***Fig glaze*** 2 tablespoons fig syrup 1/2 cup powdered sugar 1 tablespoon lemon juice
Directions: Bread: Beat eggs; add sugar and beat well. Add the figs and oil. Sift flour, soda, salt and cinnamon. Add the fig mixture alternately with the buttermilk. Beat well. Fold in chopped nuts.
Bake at 350 degrees F for 1 hour in large greased and floured loaf pans (or use 3 medium sized)
For Glaze: Combine all ingredients and brush over warm bread.
