Stuffed Baby Potatoes

ingredients
12 even sized baby new potatoes
sea salt
4 ounces Irish Cheddar cheese, finely grated
flat leaf parsley sprigs, for decoration
directions
Scrub the potatoes and make a slit along one side. Place in a roasting tray and sprinkle with crumbled sea salt. Transfer to a preheated oven (400 degrees F) for 30 minutes or until tender.
Remove from the oven and squeeze the potatoes open along the slit. Fill with the grated Irish Cheddar cheese until overflowing over the top of the potato.
Return to the oven for the cheese to melt. Then serve, decorated with fresh parsley sprigs.
