A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

ingredients
3 cloves garlic, pressed
1 onion, thinly sliced
2 ounces olive oil
4 tablespoons butter
3 cups sliced mushrooms
pepper, to taste
2 ounces dry sherry
4 cans (13.75 ounce size) chicken broth
3 egg yolks
2 1/2 ounces Parmesan cheese, grated
2 tablespoons chopped parsley
directions
Saute garlic and onion in olive oil and butter. When tender, add mushrooms and saute very slightly. Add pepper to taste. Do not salt. Add tomato paste, sherry and broth. Simmer about 30 minutes. Recipe may be done ahead to this point.
For last minute completion of this recipe, whisk together egg yolks, Parmesan cheese and parsley. Add one cup of very warm broth mixture to egg mixture and stir. Then add egg mixture to rest of broth in pan. Serve hot.

I started to make this recipe and noticed tomato paste in the directions, however, no where is it mentioned in the ingredients. How much, if any tomato paste goes into this recipe. Would love to try it!
