1/2 pound andouille sausage
1/2 cup finely shredded Monterey jack cheese
1 1/2 cup biscuit baking mix
Preheat the oven to 325 degrees F.
Remove the sausage from the casing and place in a bowl. Add the cheese and biscuit mix. Mix well.
Form the sausage into 1-inch size balls and place on an ungreased rimmed baking sheet. Place the baking sheet in the oven and bake at 325 degrees F for 18-20 minutes or until cooked through.
Serve warm. Serve the andouille sausage balls with a dipping sauce, if desired.
