Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

La Madeleine, a French-style restaurant chain, is known for many items for breakfast, lunch, and dinner. One favorite is their Caesar salad which you can duplicate at home with this simple version of their dressing.

2 eggs, pasteurized
3 ounces red wine vinegar
1 1/4 cup canola oil
1 teaspoon crushed garlic
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Add the eggs to a blender and process on low speed until well beaten.
Add the garlic and half of the vinegar and process until completely mixed.
With the blender running, add half the oil in a slow stream through the hole in the lid.
Alternate adding the remaining vinegar and remaining oil in the same way.
Add salt and pepper to taste and serve immediately or refrigerate for no more than 24 hours.

Added a chopped anchovy fillet for good measure! Good recipe. Love that it was old school style.
