A light tomato-based salad dressing that is lower in calories than regular French dressing but just as big on flavor.

1/2 cup tomato juice
2 tablespoons lemon juice
1 tablespoon finely chopped onion
1 tablespoon finely chopped green bell pepper
1/4 teaspoon salt
1/8 teaspoon black pepper
Combine the ingredients in a food processor or blender. Puree until smooth.
Use immediately or transfer to an airtight container and refrigerate for up to 1 month.

Not as thick as regular french dressing but very good
