Gorgonzola (Blue Cheese) Dip

ingredients
4 ounces Gorgonzola or other blue cheese
3 ounces cream cheese
1/3 cup Cognac or cream
Optional
2 tablespoons toasted walnuts, coarsely chopped
1 tablespoon chives, chopped
1 tablespoon parsley, chopped
directions
Mash the Gorgonzola, add the cream cheese and mix until smooth. Add the cognac to give a soft consistency. Add optional ingredients if desired.
Notes: This is good served with crackers or even apples!
