2 cups rice
1/4 cup chopped onion
4 cups water
1 teaspoon salt
2 tablespoons butter
3/4 cup coconut
1/2 cup salted peanuts
1 teaspoon curry powder
Combine rice, onion, water and salt in saucepan. Cook covered until tender, about 15 minutes or until water is absorbed.
Melt butter in frying pan. Add coconut. Saute until light brown. Add peanuts and curry powder to coconut. Stir.
To serve, mix everything together.
