ingredients

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, peeled and chopped
1 bay leaf
1 can (14.5 ounce size) whole peeled tomatoes, drained
2 teaspoons curry powder
1/8 teaspoon salt
3 pounds whole chicken, bones and skin removed, cut into pieces
1 can (14 ounce size) unsweetened coconut milk
1 lemon, juiced

directions

Heat olive oil in a large, heavy skillet over medium heat. Stir in the onion, garlic, and bay leaf, and saute until onion is lightly browned. Mix tomatoes, curry powder, and salt into the skillet, and continue cooking about 5 minutes. Mix in the chicken, and cook 15 to 20 minutes, until no longer pink and juices run clear.

Reduce skillet heat to low. Stirring constantly, gradually blend in the coconut milk over a period of about 10 minutes. Mix in lemon juice just before serving.

You can substitute 1 pound of crab or shrimp for the chicken if desired.

    My family LOVES this recipe! Even my five year old. It is one of our favorites and is easy to make even for guests. I do use diced tomatoes and jarred minced garlic to simplify. Exceptional with your favorite chutney, basmati rice and a bit of naan!

    This is a fabulous, easy recipe. I use cut up chicken breasts (about 1.5 lbs) and have substituted light whipped cream in a can (to taste) for the coconut milk - couldn't tell much difference. The lemon just makes it zing!

    This recipe is absolutely awesome! So easy to make and completely delicious - I have made it twice and everyone has been incredibly impressed. The times seem to be a little out (too long - except simmer at the end) but other than that.....top marks. This latest time I used lime instead of lemon and it was also fantastic.
