Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1-2 hrs
ingredients
1 cup butter or margarine, softened
2 cups sugar
4 tablespoons cocoa powder
4 eggs, beaten
1 cup flour
1 cup chopped walnuts
1 teaspoon vanilla extract
ICING
2 cups powdered sugar
2 tablespoons butter or margarine
2 tablespoons cocoa powder
2 tablespoons boiling water
2 teaspoons vanilla extract
directions
Cream sugar, cocoa and butter. Add beaten eggs and vanilla. Add flour and fold in walnuts.
Bake in greased 9" x 13" pan at 350 degrees F for 40-50 minutes. Top will appear to be underdone (falls in middle), but don't overcook! Should be moist and chewy.
Mix icing ingredients and spread over "hot" brownies so it will have a shiny glaze when cooled.
