ingredients
14 1/2 ounces canned stewed tomatoes, undrained
2 medium stalks celery, chopped
1 medium onion, finely chopped
1/2 medium green bell pepper, seeded and chopped
1 clove garlic, minced
1 bay leaf
3/4 teaspoon dried thyme, crushed
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon hot sauce
1 1/2 pound haddock fillets
non-stick cooking spray
directions
Combine first 10 ingredients in a medium saucepan, stirring well. Bring to a boil. Cover; reduce heat, and simmer 25 minutes, stirring occasionally.
Rinse fillets with cold water, and pat dry. Arrange fillets in a 12- x 8- x 2-inch baking dish coated with cooking spray.
Bake, uncovered, at 400 degrees F for 15 minutes or until fillets flake easily when tested with a fork. Remove bay leaf from sauce mixture, and discard. Serve immediately.
