Christmas Eggnog Loaf

ingredients
2 eggs
1 cup white sugar
1 cup eggnog
1/2 cup butter
2 teaspoons rum extract
1 teaspoon vanilla extract
2 1/4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
directions
Preheat oven to 350 degrees F. Grease the bottom only of 9x5 inch loaf pan.
Beat the eggs in large bowl and add the sugar, eggnog, butter, rum extract and vanilla, blend well.
Spoon flour into a measuring cup and level it off. Add the flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan.
Bake for 40 minutes to 1 hour or until tooth pick inserted in center comes out clean. Cool for about 10 minutes before you remove from pan.
Cool completely and wrap tightly. Store in the refrigerator.

This recipe has become a big hit in my house. I made it for a friend and gave it to her for christmas, and she just raved about it.Excellent recipe.I found a recipe for a glaze made with eggnog and it really enhanced the flavor. I also did not have rum extract, so i used real rum and put a little less. Came out good.
