Baked Chicken Breast With Tarragon-mustard Crust

ingredients
3 tablespoons whole-grain Dijon mustard
2 tablespoons white wine
3/4 cup dried bread crumbs
2 teaspoons freshly chopped tarragon
1/4 teaspoon salt
1/4 teaspoon black pepper
4 boneless, skinless chicken breast halves pounded thin
2 teaspoons olive oil
directions
Heat oven to 425 degrees F.
Combine mustard and wine in shallow bowl. Combine bread crumbs, tarragon, salt and pepper in separate bowl. Dip each chicken breast into mustard mixture. Dip each breast into bread crumb mixture; shake off excess crumbs. Lay coated breasts in shallow baking pan greased with olive oil without letting sides touch. Bake 8 minutes. Turn. Bake until just cooked through, about 4 minutes.
