It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

KFC may be known for fried chicken (it is in their name, after all) but don't knock their rotisserie until you try it. Or try the copycat, at least.

1/3 cup vegetable oil
3 tablespoons honey
2 tablespoons lime juice
1 tablespoon paprika
1 tablespoon seasoned salt
1 roaster chicken (rinsed well and dried)
In a saucepan, mix first five ingredients well and heat warm enough to melt honey. Set aside.
Place chicken in baking dish, tucking wings and legs under and/or tie chicken with kitchen twine. Cover chicken with basting liquid entirely on all sides.
Bake chicken uncovered in a 400 degrees F oven 40-45 minutes, basting chicken with liquid throughout the cooking time, or until nicely browned. Remove from oven, cover baking dish with foil and let stand 15-20 minutes to rest prior to carving.

I made this last night using a roaster chicken. While cooking, it looked like it was burning, but it actually was the glaze and seasoning darkening. My family loved it. We were all fighting for the skin because it was so tasty and crispy. The chicken was moist and plenty of au jus to use as gravy.
