Coleslaw is a great picnic side dish to make into big batches, and here's how to do it. Prepared mix saves time when mixed with fresh veggies and scratch-made dressing.

2 packages prepared coleslaw mix
2 cups shredded carrots
1 cup finely chopped bell pepper
1 cup finely chopped green onions
1 cup finely cut celery
Dressing
1 cup mayonnaise
1 cup sour cream
half and half
1/4 cup vinegar
1/4 cup sugar
1 1/2 teaspoon salt
1 1/2 teaspoon caraway seeds
In large bowl, combine vegetables and slaw mixes. Toss gently to blend together.
In another bowl, combine remaining ingredients except half and half. When mixed thin down with half and half to consistency you desire.
1 cup of Raisins could be added to this salad.
