1 double pie crust dough
2 pounds ricotta cheese
1 cup grated Romano cheese
2 tablespoons parsley, minced
4 eggs, beaten
1 cup mozzarella or Fontinella cheese
1/2 pound chopped ham, cooked sausage or other Italian lunch meat
1/2 teaspoon salt
black pepper
1 egg, beaten, to brush on crust
Line 9 or 10 in pie crust with half of crust. Mix remaining ingredients and pour into pie shell. Top with remaining crust. Brush crust with beaten egg.
Bake pie at 350 degrees F for one hour.
