These cookies are loaded up with a little something for everyone. Crispy rice cereal, oats, coconut, and nuts. The ultimate cookie.
ingredients
1 cup sugar
1 cup brown sugar
1 cup salted butter, softened
1 cup oil
1 egg
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 cup Rice Krispies cereal
1 cup flaked coconut
1 cup raw oatmeal
1 cup chopped nuts
directions
Preheat the oven to 350 degrees F.
Combine the sugar, brown sugar, and butter in a mixing bowl. Beat on medium speed with an electric mixer until creamed.
Add the oil, egg, and vanilla extract and mix for 1 minute.
Combine the flour, cream of tartar, and baking soda in another bowl. Mix well. With the mixer running, slowly add the flour in 1/2 cup increments until incorporated.
Stir the cereal, coconut, oatmeal, and nuts into the dough by hand.
Drop the cookie dough by teaspoons onto baking sheets. Press down lightly with a fork to flatten them.
Place the baking sheets in the oven and bake at 350 degrees F for 12-15 minutes or until done.
Remove the baking sheets from the oven and let the cookies cool for 2-3 minutes then transfer them to cooling racks.
Store the cooled cookies in an airtight container.
