ingredients
1 pound boneless chicken breasts, skinned and cut in strips
1 jar (2.5 oz.) sliced mushrooms, drained
1/2 cup lite Italian salad dressing
1/4 cup chopped onion
2 tablespoons diet margarine
1 medium zucchini, sliced
1 large firm tomato, cut into wedges
6 slices lite pasteurized cheese product, cut into small pieces
directions
In shallow baking dish, place chicken with mushrooms. Cover with Italian dressing. Marinate for 30 minutes. Drain and reserve marinade.
In large skillet, cook onion in margarine until tender. Add chicken and mushrooms. Cook, covered over medium heat until chicken is tender.
Add zucchini, tomatoes and reserved marinade. Cook and stir until zucchini is tender.
Remove from heat. Sprinkle with cheese product. Cover and let stand for 2 minutes or until cheese begins to melt.

This was a REALLY good mean and you would never guess it to be under 300 calories. We ate it with rice as well. You think when you are making it that it would have a strong italian dressing taste but all of the natural juices from the veggies really make this meal. I added nothing. Only doubles the recipe.

I thought it was good but my roommates were literally licking their plates!! I put it on rice...made for an interesting version of stir fry. But LOW CALORIE!! :P
