Chicken Salad Log

Serve this retro-style chicken salad "log" with your favorite crackers for a simple appetizer or snack.
2-5 hrs
ingredients
1 package (8 ounce size) cream cheese, softened
1/4 cup mayonnaise or salad dressing
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
4 drops tabasco hot sauce
2 cups chopped cooked chicken
2 hard cooked eggs peeled and chopped
1/4 cup chopped green onion
directions
Combine the cream cheese, mayonnaise, lemon juice, salt, pepper, and tabasco in a bowl and mix until smooth.
Stir in the chicken, eggs, and green onion.
Place the mixture on a piece of plastic wrap and form it into a log shape. Roll the plastic wrap up around the log, sealing it in. Place the chicken salad log in the refrigerator for 4 hours.
When ready to serve, remove the plastic wrap from the chicken salad log and place the log on a serving plate. Serve with crackers.
