2 tablespoons butter
1/4 cup onion, minced
1/4 cup flour
4 cups chicken broth
2 cups cooked wild rice
salt, to taste
1 1/2 cup half and half
1/2 cup grated carrots
1/2 cup chopped ham
1 cup grated Cheddar cheese
3 teaspoons almonds
Melt butter, saute onion, then blend in flour. Gradually add broth and cook, stirring constantly. Add rice and salt. Simmer 5 minutes.
Blend in half and half. Add carrots, ham and cheese. Serve garnished with almonds on top.
