Millet
Millet is one of the oldest grains, dating back even further than wheat and rice. Millet is a tiny, golden yellow seed that has a mild nutty flavor. It's packed with protein, iron and B vitamins. It's also extremely versatile and can be used in both sweet and savory dishes. A little goes a long way in recipes as it will cook up to four times its original size, which makes it an economical grain as well.
