Barley is a popular grain because it goes well with both meat and vegetables and can be used in everything from salads to soups to breads and desserts as well. It comes in hulled and pearled forms. It's a good source of total dietary fiber because it contains fiber throughout the entire kernel, not just the outer layer like other grains.
