Cooking Glossary light: the FDA-approved food-labeling term used to describe a nutritionally altered food with at least 33% less calories, 50% less fat or 50% less sodium than the regular or reference (i.e. FDA standard) food.

mock duck: Made from fresh, organic wheat gluten, a protein folded and pressed to create a chewy, meaty substance that is then glazed and treated as a meat-free alternative to duck in Buddhist and other vegetarian dishes. Available in cans in Asian grocery stores.


Helpful healthy eating Hints

Cooking TipsLowering the Fat, Cream cheese: In most recipes you can use fat-free cream cheese or blended fat-free cottage cheese instead of regular cream cheese. For recipes where fat content is necessary, try using half regular cream cheese, and half reduced or fat-free cream cheese

Cutting Calories, Tips: When cooking a dish with both vegetables and meat (i.e. in stir frys and stews), reduce the amount of meat by 1/3 and increase the amount of vegetables by 1/3. You will hardly notice!
