Tomato Soup

Tomato soup is such a versatile recipe. You can serve it chilled on a hot summer day, or hot to warm you up in the winter. Tomatoes are rich in vitamins and minerals, making these soups a smart choice. Hint: If using fresh tomatoes, do not store them in the refrigerator. It will make them spongy and mute their flavor. Keep them in a cool, but not cold, spot. They should not be stored below 55F. If you are using the whole canned variety, a quick way to chop them is to leave them in the opened can and snip them with a kitchen scissors.
