Cooking Glossary Lyonnaise Sauce: A classic French sauce preparation made with sauteed onions, white wine and demi-glace. The sauce is strained before being served with meats and sometime poultry.

Bordelaise: This is a term primarily used to describe a brown sauce that includes shallots and red wine. Some versions of this sauce include slices of bone marrow added at the end of cooking. Fish dishes with this name will be cooked with white Bordeaux wine.

Cooking TipsLowering the Fat, Sauce: Make your own white sauce using 2 tablespoon reduced-fat margarine, 2 tablespoon flour, and 1 cup skim milk. Add fat-free cheese slices for a great cheese sauce.

Quick Sauce for Veggies: If you don't have time to make a cream sauce for vegetables, just combine equal parts mayonnaise and water used to cook the vegetables. Season to taste.
