Arroz Con Pollo (Spanish Rice with Chicken)

Arroz con pollo translates literally to "rice with chicken" in Spanish. The dish exists in both Mexican and Spanish cooking and is made from sauteed chicken that is cooked with tomatoes, bell peppers, chicken stock, rice, saffron, and other seasonings.
