Broccoli cheese soup is versatile in that it works well any time of the year. It can be a light meal in the summer, or a comforting dish in the colder months.
valerie says: The thing I like most about these recipes is that you can make this yummy soup in the crockpot just as easily as on the stovetop. My experience has been that you don't want to use lower fat/reduced fat cheese in these recipes or they can separate. Lower fat Velveeta usually melts ok, however.
When using frozen broccoli, make sure to drain it well (or if adding it frozen make sure to knock off as much of the ice crystals as possible) so the soup doesn't get watery. If the soup is thick you can always add more liquid but it's more work to try to thicken it later if it ends up too thin.
