Beef brisket comes from the breast or lower chest. There are two cuts: flat cut (the leaner cut) and point cut (the fattier cut). Brisket, since it is a tough cut of beef, is most often braised or slow smoked/cooked on a grill over indirect heat. This cut of beef is extremely popular in Texas. It is also traditional in Jewish cooking.
